Coffee

Our cafe is equipped with a full espresso bar proudly serving Redhawk Coffee. Sara Savage began our coffee program early on during our popup days in 2017. The program started simply, with bottles of cold brew and one single origin drip coffee. At the time, Sara was working as a barista at Redhawk. When we opened Pigeon, Sara knew they wanted to continue serving Redhawk Coffee. Since then, we have worked with Redhawk to source coffees from women owned farms and even created our very own signature espresso blend.

Like the entirety of Pigeon, our espresso bar is Kosher. All of our dairy milk served is Cholov Yisroel. We also offer oat milk as an alternative at no extra charge. Sara makes all of our house-made syrups - Cinnamon Honey, Vanilla and one rotating seasonal flavor. We work hard to bring you quality coffee that is sourced with intent and made with great care.

Our signature espresso blend!

In November 2023, my good friend Michael Kuban of Redhawk Coffee hosted us for a cupping of a variety of coffees from different origins. There, we were able to put together a blend that is perfect for our daily espresso. I was born in Vietnam, the second largest coffee exporter in the world. It had always felt important to highlight this in our coffee program. Known mostly for its production of dark roasted robusta beans, we wanted to include Vietnamese beans to our blend that were more reflective of the brighter flavors you see in most specialty coffee . 60% of the blend are arabica beans from the Đưng KNớ commune in Vietnam. They are savory, balanced with a smooth mouthfeel. The blend is also mixed with a percentage of Brazil and Ethiopian beans to help create a nutty acidity and lasting finish.
